Hard parsley capsules contain many vitamins, minerals, and antioxidants that can provide important health benefits. It is an especially rich source of vitamin K. One tablespoon of freshly chopped parsley provides more than 70% of the recommended daily intake.
Parsley contains high amounts of the flavonoid apigenin. While cooking and/or drying may reduce some of the other health benefits of parsley, it increases the apigenin available in parsley. In fact, dried parsley is the best natural source of apigenin.
Flavonoids are pigments and powerful antioxidants in certain flowering plants. Apigenin has shown particular potential as an anticancer agent, but more research is needed.
